Spanish restaurant Alta, led by Rob Roy Cameron, will head to Soho’s Kingly Court
MAD Restaurants, the new restaurant group from L’Eto café chain founder Artem Login, will open its second site in September.
Alta in Kingly Court in London will be a homage to regional Spanish cooking led by head chef Rob Roy Cameron, who has worked at elBulli and 41 Degrees with Albert Adrià and was most recently executive chef at London’s Gazelle.
The concept at Alta is inspired by open fire cooking and northern Spain, and it will serve an informal menu of sharing plates and dishes from the grill.
Escabeche (marinated fish, meat or vegetables, common in Spain) incorporating British vinegars and oils will be prevalent across the menu and will focus on low-carbon ingredients from small-scale producers and farmers.
Dishes will include Cornish mussels and grilled bread, homemade txistorra (cured sausage) and onion cider jus, and 38-day-aged beef sirloin.
The drinks offering will be curated by Dino Koletsas, most recently head of bars and beverages at Harrods, with a wine list consisting predominantly of European wines.
The 5,591 sq ft restaurant will seat more than 100 guests across two floors and private dining rooms, including an outdoor terrace, and will open for lunch and dinner service seven days a week.
The interiors will showcase a colour palette of earthy and muted tones and incorporate a combination of exposed brick, wood and exposed concrete. A borderless kitchen, including a large open fire grill, will be positioned on the ground floor alongside a chilled counter displaying the catch of the day, surrounded by both standalone and banquette seating.
The latest opening follows the group’s first site, the Japanese grill and sushi restaurant Moi in London’s Wardour Street, which is set to open by the end of this month. Both Alta and Moi are being overseen by MAD Restaurants’ executive chef Andy Cook.
MAD Restaurants’ wider team includes group operations manager Giulia Cappuccio, who has held roles at the Ledbury and Kol.
