Alain Roux’s four events celebrated the Waterside Inn’s 40 years of three Michelin-starred status

Alain Roux has raised £127,755.31 for charity across a series of four events celebrating 40 years of the Waterside Inn holding three Michelin stars.
The dinner series launched in May with Heston Blumenthal, followed by events hosted alongside Michel and César Troisgros in September, then Clare Smyth in October, and culminated in a grand finale at the Bray restaurant on 5 December.
An equal proportion of discretionary proceeds from the dinners were donated to a collection of charities selected by the Waterside Inn and its guest chefs.
The final event saw Alain joined in the kitchen by Michel Roux to serve a bespoke six-course menu paired with Champagne and Grands Crus Classés wines, showcasing Roux classics including poached langoustine with ginger and Champagne butter sauce; seared scallop with buddha’s hand and gold kiwi, coconut sauce; and roasted Angus beef fillet with potato röstiand zingara sauce.
A highlight of the night was Alain and Michel personally shaving fresh truffle over each guest’s white truffle soufflé Suissesse, bringing theatre to the occasion.
The cousins were joined by renowned pastry chef Pierre Hermé, who travelled from Paris for the occasion. He created his signature Ispahan dessert, with rose, raspberry and lychee elements, to conclude the menu.
